There are literally hundreds of recipes online for lemon cake, and being a big fan of all things lemon, I’ve tried several of them and nothing compares to homemade cake. However, as we throttle back up to full speed post pandemic, life is busy and I’ve found for this stoner, that a store bought lemon cake mix is nearly as good with a little help from 2 friends: Lemon and Cannabis!
1 box lemon cake mix
1 cup water
3 eggs
1/4 cup vegetable oil
1/4 cup canna butter (melted)
3-1/2 tbsp flour
Zest of 1 lemon
Preheat the oven to 350 degrees.
Grease a 9” x 13” pan
Add all ingredients to a large mixing bowl and using a hand mixer, beat for at least 2 minutes. Pour the batter into your greased pan and bake for 20 minutes.
Check for doneness by inserting a skewer or toothpick into the cake, if it comes out clean then you’re done! If not, bake for 2 to 3 additional minutes.
Remove cake from the oven and let it cool completely.
